Jajangmyeon is a Korean black bean sauce noodle dish packed with umami. This is my mom’s healthy version; we swapped in zucchini noodles and used ground chicken instead of ground pork.
1. Sauté the ginger, garlic and onion in olive oil until the onions become slightly transluscent (2-3 minutes); add the ground chicken and cook through.
2. Add the diced zucchini, black bean sauce, scallions, soy sauce, and chicken broth mixed with cornstarch - saute for 2-3 more minutes (the sauce will begin to thicken); add salt and pepper to taste and feel free to add more black bean sauce if you want stronger flavor.
3. In a separate pan, warm up the zucchini noodles in some olive oil with salt and pepper (3-5 minutes).
4. Serve the black bean sauce chicken on a bed of zucchini noodles with some sliced cucumber on top; option to garnish with a sprinkle of sesame seeds.
