Vegan, refined sugar free & gluten free frozen banana snickers. Made with date caramel which tastes just like the real thing, offering the best combination of textures and flavors!
1. Blend together ingredients for the date caramel in a high powered blender or food processor and set aside.
2. Slice the rounded edges off of the bananas and then slice into two flat strips; depending on how large your bananas are, option to cut the strips in half down the middle to create shorter snickers.
3. Place bananas on a parchment paper lined cookie sheet or plate and then spread a layer of date caramel on each banana slice; add one layer of peanuts on top of the date caramel and then freeze for at least 2 hours (or until frozen solid).
4. Melt chocolate by placing a heat resistant bowl over a pot of barely simmering water (double boiler method; bowl should not be touching the water); whisk the chocolate until it's melted and then thin it out with 1 Tbs olive oil (you can also microwave the chocolate, but I find the double boiler method is more fool proof in preventing the chocolate from burning).
5. Take the snickers out of the freezer and cover them in the melted chocolate; place back on the parchment paper and freeze until chocolate sets (at least 30 more minutes).
6. Cut off any excess chocolate with a sharp knife and sprinkle the snickers with maldon salt - enjoy! Store in the freezer.
