Turkey Meatball Spaghetti Squash

1. Preheat oven to 400°F.
2. Coat the inside of the spaghetti squash with olive oil and sprinkle with salt and pepper, roast cut side down for 45 minutes and then turn the oven down to 350°F (option to turn the oven lower earlier so the meatballs and spaghetti squash overlap in the oven, in this case just leave the squash in 5-10 extra minutes).
3. Soak the oatmeal in the almond milk and in a separate bowl, combine the ground turkey, garlic, zucchini, eggs, parsley and salt; add the oatmeal to the mix (draining any excess liquid).
4. Mix the meat mixture and form into 3-inch balls, place on a baking sheet coated in non-stick spray.
5. Bake at 350°F for 30 minutes.
6. Once the meatballs are done, place them in a sauce of your choice; serve over spaghetti squash.
