15 mins prepServes 2
The perfect summer salmon sandwich featuring wild Bristol Bay sockeye salmon, a bright lemon dill aioli, and crispy capers. This rich-flavored fish is ideal for summer grilling and pairs wonderfully with seasonal produce.
1. Mix together the mayonnaise, lemon juice, minced fresh dill, and grated garlic for the aioli. Set aside in the fridge. Blot capers dry between two towels.
2. In a small pan, add avocado oil so it comes up the side of the pan about 1/4 inch. Heat oil until it reaches 350°F and then add your capers. Cook for 2-3 minutes until crisped and then drain on a paper towel lined plate.
3. Toast the brioche buns on a grill or grill pan until warm and crisped on the inside and set aside.
4. Season the salmon filets with salt and pepper and sear on a greased grill or grill pan for 2-3 minutes per side until the internal temperature reaches 120°F or above.
5. Assemble the sandwich with butter lettuce on the bottom, then the salmon, a generous spread of aioli, crispy capers, and micro greens on top. Enjoy!
