A quick and flavorful noodle dish featuring a creamy peanut butter sauce, garlic, rice vinegar, and soy sauce, topped with sizzling hot oil and fresh scallions.
1. Bring a pot of salted water to a boil for the noodles.
2. In a separate medium bowl, add the peanut butter, grated or finely minced garlic, rice vinegar, and soy sauce.
3. Boil the noodles according to package directions. Towards the end of the cooking time, carefully transfer 1/4 cup of the boiling starchy noodle water to the bowl with the sauce and whisk until smooth.
4. Drain the cooked noodles and add them to the bowl with the sauce and mix well. Place the sliced scallions in a pile on top of the noodles.
5. In a small pan, heat the avocado oil (or other neutral oil like canola) until super hot and smoking.
6. Using a spoon, carefully drizzle the hot oil onto the scallions so they sizzle and fry.
7. Mix the scallions and oil in with the noodles and enjoy!
