(~1 Cup) Fresh Mozzarella, sliced▪️ . 🌱Vegan Modification: Sub in nutritional yeast for parmesan and plant based cheese for mozzarella; leave out the sausage . 1️⃣ Preheat oven to 400°F 2️⃣ Cut spaghetti squash in half longways (microwave for 1-2 mins if it's hard to cut), scrape out the seeds with a spoon, sprinkle with salt and pepper, and bake cut side up for 45-55 mins (until you can easily scrape the threads out with a fork.. you want the threads to be al dente when done and not mushy so don't overcook) 3️⃣ In a large pan over medium heat, sauté sausage in olive oil (break into small pieces with your spatula) and then remove from the pan once cooked through 4️⃣ Add the onion and zucchini to the pan, and season with red pepper flakes, oregano, garlic powder and a sprinkle of salt and pepper; sauté until onions are slightly caramelized and zucchini is tender then turn off the heat 5️⃣ Once the spaghetti squash is done, scrape out the threads with a fork and add them to the pan with the veggie mixture; mix in 1+1/2 cups of marinara sauce and then season to taste with salt and pepper (I added 3/4 tsp kosher salt) 6️⃣ In individual baking dishes (or you could make one large dish), layer the spaghetti squash mixture, sausage, marinara sauce, parmesan, and basil; repeat for 2-3 layers until all ingredients are used 7️⃣ Top with slices of fresh mozzarella and bake at 400°F and for 25 minutes, then broil for 2-3 minutes until the top is golden brown and bubbling; let cool for 5 minutes and enjoy! . ⏲ 20 minute prep time + 1 hour 30 minute cook time
