Rice paper noodles

1. Mix together the ingredients for the sauce (soy sauce, rice vinegar, sesame oil, sesame seeds) and set aside.
2. Drizzle a cutting board with olive oil and spread it around so it coats the surface; fill a large bowl with water.
3. Stack three sheets of rice paper at a time and soak in the water until softened (approximately 45 seconds).
4. Drip dry the softened rice paper and lay it in one flat sheet on the cutting board, then generously brush the top of the sheet with olive oil (this will prevent the noodles from sticking once they are cut up).
5. Slice the oiled rice paper in 3/4” thick strips and carefully place in a bowl; repeat with the other two rice paper stacks.
6. Add the prepared sauce to the bowl along with the sliced scallion and red chili; gently mix and then serve with chili oil on top (optional) - enjoy!
