Rice paper egg rolls✨ Concept inspired by @iheartumami.ny 🤍 For the Egg:▪️2 tsp Avocado Oil▪️2 Eggs▪️Kosher Salt & Pepper▪️ For the Filling:▪️1 tsp Avocado Oil▪️1+1/2 Tbsp Ginger, minced▪️1 Clove Garlic, minced▪️2 Scallion, sliced▪️3 Shiitake Mushrooms, sliced▪️1/2 a Carrot, sliced in thin strips▪️1 Cup Green Cabbage, sliced in thin strips▪️1 Cup Red Cabbage, sliced in thin strips▪️1 Tbsp Soy Sauce▪️1 Tbsp + 1 tsp White Vinegar▪️2 tsp Sesame Oil▪️2 tsp Sesame Seeds▪️1/4 tsp Kosher Salt▪️1/4 tsp Pepper▪️1/4 tsp Sugar▪️ For the Rolls:▪️1/4 Cup Avocado Oil▪️8-10 Sheets Rice Paper▪️Sweet Chili Sauce, for serving▪️ 🌱Vegan Modification: Leave out the egg 1️⃣ Beat eggs with salt and pepper and then cook in one layer (like an open face omelet) in a large nonstick pan coated with avocado oil (cover the pan with a lid if you have one so the top of the egg cooks, or flip it once); remove from the pan, let cool, roll up and cut into thin strips 2️⃣ In the same large pan over medium heat, sauté the ginger, garlic and scallions in avocado oil until fragrant (1 min); add the rest of the filling ingredients and sauté until veggies are tender (4-6 min) 3️⃣ Fill up a large bowl (or pie dish) with water and place two damp paper towels on a cutting board; soak the rice paper wrapper in water for ~15 seconds (don't leave it in too long bc it will continue to soften as you work) and place on the paper towel lined cutting board 4️⃣ Place 2 Tbsp of the filling mixture in a rectangle in the lower third of the rice paper along with two strips of egg; fold the bottom up over the filling, the sides in, then roll up to seal shut 5️⃣ Preheat a large nonstick pan with 1/4 cup avocado oil over medium heat; working in batches, pan fry the egg rolls 2-3 mins per side until golden brown (watch carefully and check on them often so they don’t burn / try to get 3 sides of each egg rolls crisped) 6️⃣ Place on a paper towel lined plate to drain excess oil and then serve immediately with sweet chili sauce - enjoy! ⏲25 minute prep time + 20 minute cook time Recipe makes 8-10 rolls
