Rainbow soba salad

1. Bring a salted pot of water to a boil and add the soba; cook for 3 mins (or longer if you don’t like a chewy noodle, however, they will continue to soften a bit after you remove them from the water) and then drain and run under cold water with some ice cubes to cool them down. 2. Remove the ice and dry off the noodles with some paper towel, combine with the rest of the ingredients for the salad. 3. Whisk together the ingredients for the sauce and pour over the salad; mix. 4. Top with some additional sesame seeds and enjoy!
