Crispy phyllo pastries filled with a savory mixture of crumbled feta, eggs, dill, and chives, baked until golden brown. Optional vegan modification available.
1. Preheat oven to 350°F.
2. In a bowl, mix together the feta, eggs, dill, chives, salt, and pepper until well combined.
3. Place one sheet of phyllo on a clean surface and brush lightly with melted butter. Place another sheet of phyllo directly on top and brush lightly with butter again. Cut the stacked phyllo into four even rectangles (it helps to keep your stack of extra phyllo under a lightly damp towel to prevent it from drying out).
4. Place 1 tablespoon of the feta filling on each rectangle along the short edge of the rectangle, leaving about 1/2 inch at each side. Roll the phyllo over the filling, tuck the sides in halfway up, and then continue to roll closed to form a cigar shape.
5. Place the phyllo cigars on a baking sheet seam side down. Lightly brush the tops of the cigars with more melted butter.
6. Bake for 30 minutes, or until they are golden brown and crispy. Enjoy with honey if you please!
