Transform your leftover mashed potatoes into delicious pan-fried pierogi-stickers! Half pierogi, half potsticker -- a true representation of eastern European and Chinese heritage.
1. Mix together mashed potatoes with chives (if potatoes are not seasoned, season to taste with salt, pepper and butter).
2. Place a heaping teaspoon of the potato mixture in the middle of a potsticker skin; using your fingertip, moisten the perimeter of the skin with water (this will act as an adhesive).
3. Starting at the top, fold the potsticker skin in half and then pleat the sides shut.
4. Cover the bottom of a large nonstick pan with olive oil, place the pierogi-stickers in the pan and add 1/2 cup of water; cover the pan and cook on medium-high heat for 7 minutes.
5. Uncover the pan and lower heat to medium, flip the potstickers onto another side and cook uncovered for 3-5 more minutes until crispy and golden brown on two sides.
6. Serve with sour cream and enjoy!
