Nana's Broccoli and Cheese Stuffed Chicken

1. Preheat oven to 350°F and season both sides of the chicken (pounded thin and cut in half) with salt and pepper.
2. Place breadcrumbs and parmesan in a shallow bowl or plate and mix together.
3. Coat the chicken with the breadcrumb mixture on both sides then place one piece of Swiss cheese and 2-3 broccoli florets in the center of the chicken breast, roll the chicken breast up and place seam side down in a glass baking dish.
4. Nestle any remaining broccoli in the pan (sprinkle some extra parm and breadcrumbs on it too) and place a thin slice of butter on top of each chicken breast.
5. Cover the whole dish with a layer of Swiss cheese.
6. Bake for 45 minutes, then broil for 2-4 minutes until the Swiss cheese on the top is golden brown and bubbling (watch while you’re broiling because the cheese will burn if left for too long) - enjoy!
