A classic recipe for homemade potstickers featuring a savory ground pork filling, served with a delicious dipping sauce, perfect for a family meal or appetizer.
1. Add the pork, garlic, ginger, cabbage, scallions, egg, salt, pepper, sesame oil, shaoxing wine, and soy sauce to a bowl and mix until all ingredients are evenly distributed.
2. Mix the cornstarch with 1/4 cup of water and stir it into the meat mixture.
3. Put 1 Tbsp of the meat mixture in the middle of a potsticker skin; using your fingertip, moisten the perimeter of the skin with some water (this will make it stick); fold the skin in half and pinch in the middle then pleat the sides shut (I usually do two pleats on each side).
4. Coat the bottom of a large nonstick pan with 2 Tbsp olive oil, place the potstickers in the pan and add 1/2 cup of water - cover the pan and turn the heat to medium high; cook covered for 7 minutes (this will steam the potstickers).
5. Uncover the pan and lower heat to medium, add more olive oil if needed and flip the potstickers onto another side - cook uncovered for 5-7 more minutes until crispy and golden brown and internal temp reaches 165°F or above.
6. While the potstickers are cooking, mix together the ingredients for the sauce.
7. We like to serve the potstickers sitting on a bed of red cabbage with sauce poured on top so the cabbage turns into a delicious asian slaw - enjoy!
