Lighter chicken fettuccini alfredo✨ . For the Topping:▪️1 Tbsp Olive Oil▪️1/4 Cup Panko Breadcrumbs▪️3 Tbsp Parsley Stems, sliced tiny▪️1 Pinch Salt▪️1/2 a Lemon, zest▪️ . For the Pasta:▪️1 lb. Chicken Breast▪️2 tsp Olive Oil▪️1 lb. Fettuccini▪️2 Cloves Garlic▪️4 Tbsp Butter▪️1/4 Cup Flour▪️4 Cups 2% Milk▪️2 tsp Kosher Salt▪️1 tsp Black Pepper▪️1 Dash Nutmeg▪️1 Dash Cayenne Pepper▪️1/4 Cup Light Cream Cheese (2 oz.)▪️3/4 Cup Grated Parmesan▪️ . 🌱Vegan Modification: Sub in oat milk for milk, olive oil for butter, nutritional yeast for parmesan, and plant based cheese for cream cheese; leave out the chicken . 1️⃣ Bring a pot of generously salted water to a boil for the fettuccini 2️⃣ In a small pan over medium heat, sauté the parsley stems and panko in olive oil with a pinch of salt until panko is golden brown; turn off the heat, add the lemon zest and transfer to a bowl (this will be the pasta topping) 3️⃣ Pound chicken 1/3” thick and season with salt and pepper on both sides; preheat a large pot over medium heat and cook the chicken in olive oil for 3-4 mins per side (or until internal temp is 165F or higher); remove from the pot and cut in 1+1/2” strips; set aside 4️⃣ In the same pot over medium heat, sauté the garlic in butter for 1 min until fragrant; add the flour and cook whisking constantly for 1-2 minutes 5️⃣ Gradually pour in the milk 1/2 cup at a time, whisking constantly so that the milk fully incorporates before adding more; once all of the milk is added, continue whisking until the white sauce comes to a boil and has thickened 6️⃣ Add the salt, pepper, nutmeg, cayenne, cream cheese, and parmesan; stir and turn off the heat until pasta is ready to be added 7️⃣ Boil pasta until al dente (~2 mins less than package directions), reserve 1/2 cup of pasta water in case you need it, and then transfer noodles to the pot with the sauce 8️⃣ Turn heat to low as you coat noodles in the sauce; add the chicken and some pasta water if needed to loosen the sauce (I didn’t need to add any); cook 1-2 mins until pasta and sauce become one and serve with the parmesan, panko, parsley topping - enjoy! . ⏲ 40 minute total prep + cook time .
