A delightful recipe for a rich lava cake, perfect for two, featuring a molten chocolate center and served with optional raspberries or vanilla ice cream.
1. Butter generously and lightly flour two 6 or 8 oz. ramekins.
2. Beat egg, egg yolk, sugar, and salt until thickened and pale.
3. Melt butter with chocolate in a double boiler (place a bowl over a pot of boiling water) or in the microwave and whisk.
4. Fold chocolate into egg mixture along with flour until evenly distributed; pour into two ramekins and bake at 450°F for 10 - 12 minutes until edges are set but center is still soft.
5. Let cool for just one minute and then invert onto a plate carefully (place a plate on top of the ramekin facing down and then flip over.. wait 10 seconds and tap top of the ramekin to encourage the cake to release); top with powdered sugar and serve with raspberries or vanilla ice cream and enjoy!
