A flavorful Korean BBQ bowl featuring a savory sauce, lean ground beef, fresh ginger, garlic, and sweet onion, served over rice with steamed broccoli and kimchi. Perfect for a quick and satisfying meal.
1. In a medium glass measuring cup or bowl, mix together the water, soy sauce, light brown sugar, sesame oil, and cornstarch. Set aside.
2. In a large pan over medium heat, heat the avocado oil until shimmering, then add the ginger and cook, stirring, for 1 min until fragrant. Add the onions and cook, stirring occasionally, for 3-5 mins until translucent and almost tender, then add the garlic and cook for 1 min until fragrant.
3. Add the beef, salt, and pepper, and cook, breaking the beef into small pieces with your spatula, until browned and cooked through (3-5 mins).
4. Stir the sauce (because the cornstarch will have settled), and pour it into the pan. Turn the heat up to medium high, and cook, stirring, until the sauce bubbles and thickens and coats the beef (1-2 mins). Taste and add a little more salt and pepper if you’d like. Remove from the heat.
5. Place the broccoli florets in a large microwave-safe bowl with 3 Tbsp water. Sprinkle with a little salt. Cover the bowl with a plate and microwave until the broccoli is bright green and slightly tender (3-4 mins). (Alternatively, blanch the broccoli in boiling salted water for about 1 min.)
6. Add the broccoli and rice to the base of your bowls. Top with the beef and a small mound of kimchi, then sprinkle with sesame seeds and enjoy!
