Save this marinade for the juiciest, most flavorful chicken! This recipe features tender chicken breasts marinated in a zesty lemon-oregano mixture, then seared and roasted or grilled to perfection.
1. Place the chicken breasts between two pieces of plastic wrap and pound them to an even 1/2-inch thickness to help tenderize the meat. If the breasts are large, cut each one in half.
2. In a medium bowl, whisk together the olive oil, lemon juice, oregano, garlic, salt, pepper, dijon mustard, and honey. Add the chicken to the bowl and toss to coat each piece evenly in the marinade. Cover and marinate for at least 30 mins, or ideally 4–6 hours in the refrigerator.
3. Preheat the oven to 400F. Take the chicken out of the fridge 30 minutes before cooking to bring it to room temperature. Heat a grill pan (or any oven-safe pan) over medium-high heat for about 3 mins, then oil it with avocado oil. Add the chicken in a single layer and sear undisturbed for 2–3 mins until golden on the bottom. Flip the chicken, then transfer the pan to the oven and roast for 6–10 mins, or until the internal temperature reaches 165F. (To grill outdoors: Preheat a grill to medium-high heat. Grill the chicken for 3-4 mins per side, or until nicely charred and the internal temperature reaches 165F.)
4. Let rest for 5 mins then serve with some more fresh oregano sprinkled on top. Enjoy!
