I'm definitely not a professional sushi chef 😅 but this was so fun! The sushi rice turned out absolutely perfect and I loved the tuna, cucumber and avo combo 🍣✨ hope you enjoy! Feel free to sub in whichever fillings are your favorites! A vegetarian modification is also provided.
1. Wash the sushi rice 2-3 times until the water runs clear, then cook according to package directions.
2. While the rice is cooking, combine the rice vinegar, sugar, and kosher salt in a small saucepan. Bring to a boil over medium heat, whisking until all the sugar is dissolved. Set aside to cool.
3. Once the rice is done, spread it out in one layer in a large bowl. Drizzle with the cooled vinegar mixture while the rice is still hot. Fold the vinegar into the rice while fanning it to make it shiny and prevent it from getting mushy. Keep the rice covered with a damp towel until ready to use.
4. Cut a nori sheet down to the right size (e.g., cut off 1/3) and place it shiny side down on a bamboo sushi mat. Wet your fingers and spread the sushi rice evenly onto the nori sheet.
5. Place the sliced cucumber, avocado, and tuna towards the bottom of the nori sheet.
6. Roll the sheet into a cylinder using the bamboo sushi mat. With a very sharp knife, cut each roll in half and then cut each half into 3 pieces. Enjoy with soy sauce and wasabi!
