Delicious and healthy caramel apple bars made with an almond flour crust and an almond butter caramel topping. These bars are gluten-free, dairy-free, and refined sugar-free.
1. Preheat oven to 325°F (160°C) and line an 8"x8" baking dish with parchment paper.
2. Mix together all crust ingredients (Egg, melted Coconut Oil, Coconut Sugar, Salt, Vanilla, Almond Flour) and press into the base of the prepared baking dish. Use a spatula to smooth into one even layer. Bake for 10 minutes.
3. Increase oven temperature to 350°F (175°C). While the crust is baking, mix together the apple filling ingredients (peeled & sliced Apples, Almond Flour, Coconut Sugar, Cinnamon).
4. Once the crust is lightly baked, press the apple filling mixture into the baking dish in one even layer on top of the crust.
5. Combine the crumble ingredients (Old Fashioned Oats, Coconut Sugar, Cinnamon, Almond Flour, room temp Coconut Oil) by cutting the room temperature coconut oil into the oat mixture using two knives or a pastry blender until crumbly. Sprinkle this crumble mixture evenly on top of the apple filling.
6. Bake for 30-35 minutes, or until the topping is golden brown. Let the bars cool completely before proceeding.
7. While the bars are cooling, prepare the caramel: In a small saucepan over medium heat, mix together all of the caramel ingredients (Maple Syrup, Almond Butter, Coconut Oil, Vanilla, Salt) until melted and well combined, stirring continuously.
8. Drizzle the caramel over the cooled bars with a spoon and cut into individual pieces. Enjoy!
