Grandma's Chinese steamed eggs✨. A simple yet delicious dish made with eggs, water, salt, scallions, soy sauce, and sesame oil, all steamed to perfection.
️⃣ Crack eggs into a heat safe dish; use half of an egg shell to measure and add equal parts water to the dish (12 half egg shells of water for 6 eggs)
️⃣ Add the salt and beat until smooth; stir in the scallions
️⃣ In a large pot with a lid, add 2 inches of water and place a steamer basket upside down (or another heat safe item that will elevate the egg dish above the water line.. you can even crumple foil)
️⃣ Add the dish with the eggs and cover and cook on high heat until you start seeing steam (~5 mins); then lower the heat to medium and steam covered for ~14 more mins
️⃣ Remove the lid and poke the center of the eggs with a chopstick or knife; if there's still liquid, steam covered for another 1-2 mins
️⃣ Drizzle with soy sauce and sesame oil on top and enjoy!
