A quick and easy dish featuring two eggs cooked in a nest of crispy spaghetti, seasoned with salt and pepper, and topped with fresh grated Parmesan cheese.
1. Create two ~4” wide beds of cooked spaghetti (1/2 cup each) and set aside.
2. Preheat a large pan over medium heat and add the butter and olive oil.
3. Once the butter is melted, place the beds of spaghetti onto the pan and immediately crack one egg in the middle of each. Sprinkle with salt and pepper and cook 3-4 mins until the egg white is set and spaghetti is golden brown and crispy (yolks should be runny). While the eggs are cooking, tilt the pan, scoop up the hot butter with a spoon, and pour it onto the egg whites to encourage them to cook faster (and infuse them with buttery flavor).
4. Serve with a generous sprinkle of fresh parm on top and enjoy!
