My dad makes the best shrimp cocktail every time my family hosts a dinner party! This is his recipe - such an easy, healthy appetizer that always feels like a treat.
1. If shrimp are frozen, defrost them by soaking in a bowl of room temperature water.
2. Boil a large pot of water and season with salt, bay leaves, and sugar; get an ice bath ready in a separate bowl.
3. Add shrimp and cook until water begins to simmer and shrimp are pink; to test if the shrimp are ready, take one out and run it under cold water - eat it to make sure it's crunchy.
4. Drain the shrimp and run under cold water; place into the ice bath until cold.
5. Drain and serve with cocktail sauce made by mixing the ketchup, horseradish, tobasco, worcestershire, and lemon juice; taste and adjust the seasoning if needed.
