Delicious crispy bites filled with a savory mixture of spinach, feta, cream cheese, dill, and lemon zest, all wrapped in flaky phyllo dough and baked until golden brown. Perfect as an appetizer or snack.
1. Preheat oven to 350°F.
2. Sauté the onions and garlic in olive oil until onions are translucent (2-3 mins); then add the spinach and sauté until just warmed through (you don't really want to cook the spinach, just defrost it in the pan).
3. Transfer the spinach mixture into a bowl and add the cream cheese, egg, feta, lemon zest, dill, salt and pepper.
4. Brush the muffin cups of a mini muffin pan with melted butter, and cut phyllo into 3.5" squares.
5. Stack three layers of phyllo at a time, tilting each to create pointy edges, and then press into the muffin cups; add a tablespoon of filling in each.
6. Brush the exposed phyllo with butter and bake for 25-30 minutes until phyllo is golden brown and crispy - enjoy!
