Crispy cheesy skillet potatoes are a delicious side dish, featuring tender Yukon Gold potatoes cooked in a skillet until golden and crisp, then topped with melted cheddar jack cheese and fresh chives.
1. Preheat the oven to 425F. Place the sliced potatoes in a bowl and toss with the salt and pepper to evenly coat.
2. Heat a large ovenproof nonstick or seasoned cast-iron skillet over medium heat and add the olive oil. Arrange the potato slices in an overlapping spiral pattern, starting at the center and working your way out.
3. Pour in the water. Cover with a lid (any lid that fits, it doesn’t need to match the pan exactly) and cook over medium heat for 12-15 mins until the water has evaporated and the potatoes are tender and pierce easily with a fork.
4. Uncover and continue cooking 2-3 mins, pressing gently with a spatula, until the bottom is golden and crisp in spots. Sprinkle the cheese evenly over the top, making sure to go all the way to the edge of the pan (that’s how you’ll get those crispy cheesy bits!).
5. Transfer the skillet to the oven for 8-10 mins, until the cheese is melted and bubbling with golden brown spots. Sprinkle with chives, serve from the skillet, and enjoy!
