️⃣ Make the sauce: In a small bowl, add the Frank’s RedHot sauce, butter, honey, and salt. Whisk until well combined and set aside.
️⃣ Make the batter: In a large bowl, add the all purpose flour, white rice flour, and salt. Whisk to combine the dry ingredients, then add the seltzer. Whisk until well combined.
️⃣ Make the cauliflower: Add 1/4 cup white rice flour to a small bowl. Line a baking sheet with paper towels.
️⃣ Pour the peanut oil in a large heavy bottom skillet (you should have about 1/4-inch) and heat until it reaches 350F on an instant read thermometer. (Or test it by dropping in a bit of batter; if it bubbles and sizzles right away, it’s ready.)
️⃣ Working one floret at a time, toss the cauliflower in the white rice flour to coat, then dip it into the batter. Let the excess drip off, then place it in the skillet. Repeat with the remaining cauliflower, working in batches and leaving space between each piece.
️⃣ Cook for 3 to 4 mins, turning every minute or so, until all sides are golden brown. Remove from the skillet and place on the prepared baking sheet to drain excess oil.
️⃣ Transfer the cauliflower into a large bowl and gently toss in the sauce. Serve and enjoy!
