This chickpea pasta carbonara is so easy and delicious! The heat from the pasta cooks the egg in the sauce and the parmesan and pancetta add so much umami. Also, this recipe is takes less than 10 minutes to make from start to finish✨
1. In a large bowl, beat the eggs with the parmesan and black pepper.
2. Boil water for pasta and sauté the pancetta or bacon until crispy; boil the chickpea pasta until al dente (~6 mins).
3. Drain the hot pasta and immediately pour it into the bowl with the egg mixture; stir rapidly (this will cook the egg).
4. Mix in the pancetta and serve with fresh parsley and extra parmesan on top.
