20 mins prepServes 4
Chicken kofta lettuce wraps with a refreshing homemade tzatziki and a variety of fresh sliced vegetables. This recipe features flavorful ground chicken patties seasoned with a blend of Middle Eastern spices, served in crisp butter lettuce cups.
1. To make the Tzatziki: Grate 1/2 large cucumber. Squeeze out any excess water. In a medium bowl, combine the grated cucumber, 2 cups of 2% Greek yogurt, 1 clove minced garlic, 2 tablespoons finely chopped fresh mint, the juice of 1 lemon, 1 tablespoon olive oil, 1/2 teaspoon salt, and pepper to taste. Mix well and set aside.
2. For the Kofta: In a large bowl, combine the 1 lb. ground chicken, 1/2 cup finely chopped onion, 1/4 cup finely chopped parsley, 1/4 cup finely chopped mint, 3 cloves minced garlic, 1 tablespoon coriander, 1+1/2 teaspoon cumin, 1/2 teaspoon cinnamon, 1/4 teaspoon cayenne, 1 pinch ground cloves, 1/4 teaspoon black pepper, and 1 teaspoon salt. Mix thoroughly until all ingredients are well combined.
3. Cook the Kofta: Heat 1 tablespoon of olive oil on medium heat in a large nonstick skillet. Place small dollops of the chicken mixture onto the pan. Cook for 2-3 minutes until browned; flip over and flatten slightly with a spatula. Cook the other sides for another 2-3 minutes. Ensure the internal temperature reads 165°F (74°C) or above with a meat thermometer.
4. Assemble the Wraps: Sprinkle the cooked chicken medallions with fresh parsley (optional, from the remaining 1/4 cup). Serve immediately as a lettuce wrap using butter lettuce, with sliced cucumber, sliced tomato, sliced onion, and a generous amount of the prepared tzatziki.
