Cheesy broccoli fritters

️⃣ Bring a pot of salted water to a boil and add the broccoli; blanch the broccoli in the boiling water for 2 mins then drain and let cool while you make the aioli.

️⃣ Mix together the ingredients for the lemon parmesan aioli (add a small pinch of salt and fresh ground pepper to taste) and set aside in the fridge.

️⃣ Roughly chop the broccoli into small pieces and add it to a bowl with the rest of the ingredients for the fritters EXCEPT for the avocado oil; mix to combine.

️⃣ In a large pan preheated over medium heat, add the avocado oil; working in batches, add dollops of the broccoli batter with a cookie scoop or two spoons, flatten them slightly with a spatula, and pan fry ~2 mins per side until golden brown.

️⃣ Place the fritters on a paper towel lined plate to drain excess oil, and then serve and enjoy immediately while hot and crisp with the lemon parmesan aioli.
