These truly are the best ever CRISPY baked sweet potato fries!! The trick is soaking the sweet potatoes in water and then tossing them with cornstarch and olive oil which gives them a super crispy crust once baked✨ I served them with a two ingredient spicy aioli which pairs so well! I hope you enjoy 💕 .For the Fries:▪️1+1/2 lb. Sweet Potatoes (2 small or 1 large)▪️3 Tbs Olive Oil ▪️3 Tbs Cornstarch▪️Salt & Pepper▪️ .For the Spicy Aioli:▪️1/3 Cup Mayo▪️1 tsp Sriracha▪️ .1️⃣ Slice the sweet potatoes in thin 1/4" strips (try to make them as uniform as possible!) and soak in cold water for at least 30 minutes (or up to 6 hours), this will remove some of the starch 2️⃣ Preheat the oven to 425°F (use convection if you have it) and line two baking sheets with parchment paper 3️⃣ Drain the fries and dry them off with paper towel; pour into a bowl and toss with olive oil until all the fries are coated; add the cornstarch, salt & pepper and toss again until coated evenly 4️⃣ Pour fries onto the baking sheets; make sure that they are not touching and that the pans arer not overcrowded (over crowding will cause your fries to steam instead of crisping up) 5️⃣ Bake for 10-15 minutes (if using convection the fries will cook faster so skew towards 10 min and watch closely), remove the fries from the oven and flip them over, and then bake for an additional 10-15 minutes until the edges are golden brown and fries are crispy 6️⃣ Mix together the ingredients for the spicy aioli and serve on the side - enjoy! .⏲10 minute prep time + 30 minute soak time + 30 minute cook time
