Quick and flavorful chili garlic noodles ready in just 15 minutes, featuring spaghetti tossed in a savory sauce with garlic, chili oil, peanut butter, and soy sauce. A vegan modification is provided.
1. Bring a pot of salted water to a boil and add spaghetti; set a timer for 6 minutes.
2. Right after dropping the spaghetti into the water, start the sauce by melting butter (or olive oil for vegan) in a large pan; add the garlic and salt and sauté for 2-3 minutes until fragrant.
3. Add the chili oil, peanut butter, soy sauce, and scallion whites; sauté for 1 minute and then add the pasta water.
4. Once pasta is very al dente (after boiling for ~6 minutes), transfer it to the pan with tongs and finish cooking in the sauce; cook until noodles are desired texture and sauce has thickened (2-3 minutes).
5. Mix in the vinegar and then serve with sesame seeds and scallion greens on top - enjoy!
